Banting Avocado Cheesecake

I was first introduced to recipes using avocado pear as the hero in 2012 when I volunteered to do a food review for the July edition of Your Family magazine. The dish I was asked to review was a chilled avocado soup. I was a bit bummed that I was given the “gross” recipe to test.  I nevertheless accepted, bought the ingredients and got on with the job of creating the green mass of grossness. I was humbly rebuked by the end result which I can only describe as delicious. I’m not quite sure why I didn’t initially warm to the idea because I love avocado pear.
When I first came across a picture of an avocado cheesecake, my initial reaction was not very positive until I reminded myself of the green soup I once made. I had to try the cheesecake but with my own banting twist which is after all the staple diet of most banters.
Banting Avo Cheesecake
You will need:
For the base:
2 cups of chopped unsalted nuts
1 cup dessicated coconut
1 cup almond flour
80ml melted butter (to bring it all together)
For the cheesecake:
1 tub smooth, plain cream cheese
1 tub marscapone cheese
2 avocado pears (mashed in a blender)
30ml xylitol
1 pkt lemon flavoured Tantalize Jelly (sugar free)
50ml boiling water
1 lemon rind
Method:
Place the chopped nuts in a blender and blitz for a minute. Place blitzed nuts in a bowl and add the coconut, flour, melted butter and combine. Press mixture into a 23cm round springform cake tin and refrigerate for 30 minutes.
Dissolve jelly in the boiling water and allow to cool. Using a stick blender, blitz the avo’s till a smooth paste is formed. Add the cooled jelly and mix well. In a separate bowl combine the cream cheese, marscapone cheese and xylitol. Once this is combined, add the avocado mixture and make sure that all ingredients come together to form a smooth, silky texture. Add this mixture to the cooled nut base and place back in the fridge till cool and set.
Garnish with grated lemon rind.
