This is a quick and easy recipe to prepare for a picnic or as a snack for a party.  Once the Rillette has been prepared, you can store in glass jars which make for easy transportation and it looks great too.

You will need:
2 x 213g tins of Salmon
3/4 cups sour cream
1/3 cup mayonnaise
3 spring onions finely sliced
Zest and juice of 1 lemon
Handful of dill leaves roughly chopped
Salt and ground black pepper
50g melted Butter
Instructions:
Mix all ingredients together except butter.  Melt the butter.  Once the rillette has been bottled pour the butter over the top of the salmon and place in the refrigerator to cool.  The butter will harden which forms a protective layer over the fish.  Enjoy with a selection of biscuits or breads.
