Spicy Apple Ring

Father’s Day in South Africa falls in the month of June placing it smack bang in the middle of winter which makes this spicy apple cake the perfect accompaniment to your gifts that you take along as you visit your dad this father’s day.

I love baking with apples and have made quite a few desserts and cakes over here:

This recipe will no doubt be added to my list of favourite apple bakes. It’s easy, delicious and I’ve borrowed it from my amazing book of celebration cakes by Stork.

Cake Ingredients:
375ml castor sugar
3 eggs
250ml cooking oil
560ml cake flour
7.5ml baking powder
Pinch of salt
7.5ml ground cinnamon
7.5ml ground nutmeg
2ml mixed spice
7.5ml vanilla essence
300ml pureed pie apples
1 x 23cm ring pan

Icing Ingredients:
75ml Stork bake
50ml brown sugar
Icing sugar and water as needed to make a pourable icing
1 green apple, thinly sliced in rounds, sprinkled with icing sugar, placed on an oven tray on baking paper and dried at 120 degrees Celsius for one and a half hours

Preheat oven to 180 degrees Celsius and grease 1 x 23cm ring pan
Beat the eggs and sugar for 5 minutes
Add the oil to the egg mixture and beat
Sift the dry ingredients and fold in
Lastly fold in the pureed apples and vanilla essence
Pour into the ring pan and bake for 50 – 60 minutes or until a skewer comes out clean
Turn onto a cooling rack to cool
Place the cooled cake onto a cake plate
Make the icing by melting the sugar firstly in a splash of boiling water from the kettle
Add the Stork bake to the sugar and microwave for about 30 seconds until the margarine is melted
Stir to combine well
Add enough icing sugar and water to make it a pourable icing that is a golden colour
Pour over the cake and decorate with the apple crisps
Dust with icing sugar
