Creamy Chicken Penne

With winter being in full swing across the country, comfort eating is a bodily necessity this time of the year, right? Absolutely! Although I must admit I’m an all-year-round comfort eater. I say this unashamedly as I love food without being gluttonous about it. Everything in moderation. With that in mind, there are so many delicious “comfort type” foods I guess it all depends on what your interpretation of comfort food is. Mine is all about foods that suit the mood and the weather. For example, if it’s cold and raining, I love me a good, wholesome soup served with thick chunky bread for dunking. Another chilly weather favourite for me is stews. I literally grew up on stews since it was quick and easy to whip up and nourishingly delicious.

For me comfort food is about eating a meal that not only nourishes and satisfies my body but provides the unforgettable tastes and flavours that satisfy the mind and the soul too. Sounds rather dramatic, but that’s how it is for me. It’s food that I remember for all the good reasons.
My all-time favourite comfort food for any time of the year is pasta. I find it delicious, versatile and always a crowd pleaser. One of my preferred pastas to make is a creamy bacon and chicken penne. I normally make a large dish which my family and I can enjoy for about 2 days. With regards to any pasta dish, in my view you can play around with the recipe and add other ingredients that you enjoy such as basil, extra garlic or even chillies. It all depends on your individual taste. I’ve kept it simple so use this recipe as a base to add your own take, almost like a pizza. Add whatever suits your fancy. With that being said, here is my recipe for a simple creamy bacon and chicken penne.
You will need:
500g packet of penne
300g diced bacon
500g skinless chicken breasts, cubed
60ml butter
30ml olive oil
60ml flour
2 garlic cloves, minced
Salt and pepper
3 cups of Milk
1 cup parmesan cheese
Make the penne as per packet instructions. Be careful not to overcook the penne as you don’t want them to be stodgy. Once done, set aside.
In a large pot, melt 30ml of the butter and add all the olive oil. Add the bacon bits and fry till crispy. Add the chicken pieces and cook together with the bacon until done. Stir in the garlic and season with salt and pepper. Add the remaining butter to the bacon and chicken and melt. Add the flour and combine well. Slowly add the milk until the mixture forms a thick creamy consistency. Add the cheese, combine and enjoy!
