Despite having previously developed 3 recipes using salmon over here, here and here, I have yet to make a pasta dish using this amazing, fresh fish. As an overly obsessed Italian food enthusiast I am somewhat befuddled by this truth.
A recipe that I’ve wanted to try since purchasing the Woman & Home magazine is the featured Lemony Smoked Salmon Pasta. This very easy recipe will take you a full 10 minutes to prepare.
You will need:
300g fettuccine
100g crème fraiche
Grated zest and juice of 1 lemon
200g smoked salmon trimmings
2 tbsp chopped fresh dill
Instructions:
Cook the pasta according to the packet instructions, drain and reserve 3 tbsp of the cooking liquid.
Mix the reserved cooking liquid together with the crème fraiche and toss through the pasta along with the lemon zest and juice, smoked salmon pieces and dill. Season with salt and freshly ground black pepper and transfer to a warm dish to serve.
